The Novita wines are sourced from two areas of Italy. bria is one of Italy’s smallest regions and lies in the shadow of its more illustrious neighbour, Tuscany. Our winery comprises 75 hectares of prime vineyards situated around the picturesque town of Orvieto. Based in Emilia Romagna, Gruppo Cevico represents 18 wineries and with over 6,700 hectares under vine, so consistency of quality is guaranteed.
The grapes were macerated on their skins at 10°C lasting 12 hours. The grapes were softly pressed prior to fermentation which took place in stainless steel tanks at 15°C. The wine was left on its fine lees for four months in stainless steel tanks with daily stirings. The wine was then filtered and left to rest in tank until bottled.
