GRAPE VARIETIES: 100%Nero d’Avola

TRAINING SYSTEM: Vertical trellis, with a planting density 4.200 vines/ha, yields per hectare 80 quintal, implanted on varied soil mostly clay and limestone rich of organic materials.

HARVEST PERIOD: Second half of September-October.

VINIFICATION: The grapes are destemmed and crushed; extraction on skins followed by 15/20 days of maceration, fermentation and storage in malolactic stainless steel vessels, fermentation temperature 28°c. Fermentation period 15 days.

AGEING: One year french allier barriques and Slavonia oak barrels, six months of bottle ageing.

ALCOHOLIC CONTENT: 14.00% by Vol

FOOD PAIRING SUGGESTION: It is traditionally paired with dishes made with game, grilled meat, stews and mature cheeses. It should be served at a temperature of 18°c and uncorked one hour before drinking to enhance aromas of ripe fruit.
