Training system: Vertical trellis, implanted on varied land mostly clay and limestone
Harvest period: Half of Settember-October.
Vinification: Pressing and soft destalking with controlled-temperature fermentotion (about 30°c) instainless steel tanks; fermentation period 15 days.
Ageing: Maturated in stainless steel until mid-February, it is aged in bottle fos 2 months.
Food pairing suggestion:it accompanies Italian hors d’oeuvre, pasta and generally by the Mediterranean cuisine. It should be served at a temperature of 16°c and uncorked few minutes before the consumption, in order to enhance the freshness of the juicy wine.
