Eclisse Lunare Grottarossa 2015
Training system: Vertical trellis, wich a planting density 4.200 vines/ha, yields per hectare 80 quintal, implanted on varied soil mostly clay and limestone, well drained.
Harvest period: Second half of August.
Vinification: The grape are crushed and destemmed, fermentation in stainless steel vessels, fermentation temperature 15°c.
Ageing: Three months in Allier barriques.
FOOD MATCHING NOTE
Ideal with fish dishes and semi-mature cheeses. It should be served at a temperature of 8°c and open one hour before the consumption, in order to appreciate pleasant notes of fruits with yellow flesh, with an aromatic persistence that supposes a good seal over time.
