Set between the Andes and the Pacific ocean, and with its huge geographic range and coastline, Chile is a winemaker’s paradise. It has produced wine since the 16th century, when the Spanish brought wine-growing vines with them as they colonised the region. In the mid-19th century, the French began to introduce French wine varieties and techniques, and there has been a boom in Chilean wines since the 1980s as a result of new technology. Chile is now home to some of the finest wineries in the world, with its diverse climatic zones and perfect temperatures for acidity regulation. Carmenère, which was previously thought to be extinct and consequently mistaken for a Merlot, is perhaps Chile’s most distinctive wine, and it is used in both blends and to create a varietal wine. In the sheltered regions of Colchagua and Maipo it has a rounded flavour with hints of blackberries and spice.
